While the cuisine at Aria is labelled as modern Australian, the term can be ambiguous. What it means to Mathew Moran is the use of only the very finest fresh seasonal produce available. An extensive experience in rural Australia has been a good grounding for knowing what the country offers to a Chef with a passion to create, and in addition, to bring all the innovative and contemporary cooking and presentation skills in order to make the best use of the available produce.

Great food should be available to all who wish to experience it and at Aria there are many ways to do this. Lunch, pre-theatre and supper menus are available at a set price during the week and tasting menus and group menus are available too. Wonderful vegetArian options feature in every menu and dishes can be created to accommodate specific dietary requirements given notice. An entirely vegetArian tasting menu is available too when booked at least 24 hours in advance.
Culinary specialities include Sydney rock oysters with chorizo, slow-cooked breast of quail, and steamed pink snapper, all presented in a way which is a feast for eyes as well as the taste buds. Such is the quality of the cuisine and setting within Aria that the restaurant has quickly established itself as the premier fine dining environment in the city. Equally popular with corporate captains of industry as with national and international A list stars, what diners in Aria all have in common is a sincere appreciation of first class cuisine.
Great food demands great wines for accompaniment and in this respect Aria does not disappoint. At the heart of the collection is a Penfolds List of Australian wines which date from 1976 to 1994 and there are old and new world selections from the best boutique wineries and larger producers. Whatever the dish, there is an appropriate vintage and variety of wine to complement it perfectly.
A selection of private dining options is available at Aria, in a dining room which can accommodate from 20 to 60 seated guests or up to 120 for a cocktail party. The room benefits from wonderful views over Sydney Harbour and the city skyline and has a private bar and separate entrance for guests. Conference and media facilities are additional available. A stunning open air venue is available too, on the outdoor terrace, ideal for pre-dinner drinks and canapes or as a backdrop to wedding celebrations for up to 120 guests.
