| The Summit Restaurant has had a recent transformation under the auspices of noted chef and restaurateur Michael Moore. The original 60s style elements are reinstated through a whole new retro feel incorporating pink lamps and Campari bottles, and brought right up to date for a contemporary world. With 20 years experience gained in the finest restaurants of the Australia and Europe, Moore breathes new life into both the restaurant and the menus, which are indelibly stamped with modern Australian cuisine with accents and flourishes that bring out the best in a selection of core dishes. |
| Mouth watering culinary specialities served in the restaurant include pork belly, cooked twice, with apple balsamic sauce and glass crackling. Another favourite is the mushroom croustada, with fontina and reggiano cheese, accompanied with garlic creamed spinach and porcini mushroom glaze. The very best in local produce is employed in the cuisine, from the finest Australian beef to cheeses and wines. Fresh local seafood also takes centre stage in many dishes such as the cold smoked petunia ocean trout.
